Jerry’s Dijon Vinaigrette

This is our everyday salad dressing. Our typical dinner salad consists of mixed greens (not from a bag or plastic box!), tomatoes, some vegetables (cucumber, radish, snow peas, carrots – whatever is fresh), and an avocado when they are in season.

For Salade Niçoise, I increase the amount of dijon mustard in the dressing a little.

Jerry's Dijon Vinaigrette

Active Time: 2 mins
Yields: 1/3 cup

Ingredients

  • 1/4 cup Extra-virgin Olive Oil
  • 2 tbsp. red wine vinegar
  • 1/2 tsp. dijon mustard
  • salt and pepper to taste

Method

  1. Wisk the ingredients together in a bowl until a stable emulsion forms. Taste. Adjust proportions and seasoning as desired.

    I’ll have to try adding the Dijon mustard. I usually make my dressing just with the olive oil, wine vinegar, salt, and pepper. I actually don’t measure anything and it still comes out pretty good. We don’t like it too vinegary. I love a good salad with the delicate baby lettuces. The season is already here for more salads!

    This is our favorite dressing from now on. We tried it on a simple salad (lettuce, red onion and yellow pepper) and it was fantastic!!
